Cara Memasak Mexican Coffee Buns a.k.a Roti Boy
- Campur terigu, susu bubuk, vanilla, gula pasir, ragi instan. Aduk rata. Masukkan kuning telur dan air es sedikit demi sedikit sambil diuleni hingga kalis.
- Masukkan mentega dan garam. Uleni kembali hingga kalis elastis. Adonan mulus, licin dan tidak mudah sobek. Bulatkan adonan. Taruh dalam wadah yang dioles sedikit minyak. Tutup dengan serbet lembab. Diamkan sekitar 45-60 menit untuk proses fermentasi (proofing 1) hingga ukurannya 2x lipat.
- Kempiskan adonan, uleni sebentar lagi. Bagi adonan menjadi 9-1w bagian sama beratnya sekitar 40-50 gr. Pipihkaan adonan, beri isian margarine dingin. Rapatkan dan bulatkan. Tata dalam loyang yang sudah dioles margarine dan baking papper. Diamkan sekitar 30-40 menit untuk proses fermentasi (proofing 2) hingga mengembang.
- Sambil menunggu proses proofing, buat adonan topping. Larutkan kopi dengan 1 sdm air panas, dinginkan. Sisihkan. Kocok margarine dan gula halus hingga benar-benar lembut. Masukkan telur, kocok rata. Masukka terigu dan susu bubuk. Aduk rata. Masukkan air kopi. Aduk rata. Masukkan ke dalam piping bag, simpan di kulkas hingga akan dipakai.
- Panaskan oven 200'C (oven harus sudah dalam keadanaan panas saat adonan masuk).
- Setelah proofing 2, semprotkan topping melingkar sampai 3/4 permukaan adonan. Panggang dalam oven 200'C selama 12 menit.
